Pea kofta is one of the several traditional and local foods of Toviserkani people.
The ingredients for 4 or 6 persons:
The kernel of ham meat: 500 G
Pea: 400 G
Hot onion: 2 table spoons
Sauce: 1 tablespoon
Vinegar: half of a glass
Grape's extraction: half of a glass
Salt, pepper, turmeric: as you need
Ingredients for inside of kofta: dates without kernel, palm, raisin, barberry, walnut and a poached egg.
The way of preparation: Soaked the pea for 12 hours. Then mince the pea and meat for two or three times together. Then add the salt and spice, also add half of the hot onion and then roll it well. Add the egg and roll it for 10 minutes. Pick a little of your production and knead it. Make a hole in the center of it and put mentioned ingredients, for inside of it, with a table spoon of hot onion. Close the Kofta and knead it again.
